Curry Dip

It’s summer and this time of year there always seems to be an old friend or neighbor popping by for an impromptu visit. While I always prefer a “heads up”, this Curry Dip has a  great kick to it and is quick and easy to whip up while your guest is opening the wine or choosing a beer from the refrigerator.  The best thing is…everything you need is already in your pantry, refrigerator or garden!

Ingredients

  • 1 1/2 Cups mayonnaise
  • 2 Teaspoons curry powder
  • 12 Tablespoons grated onion
  • 1/2 Teaspoon dry mustard
  • 1/2 Teaspoon salt
  • Few drops Tobasco or other hot sauce

Directions

  • Combine all the ingredients and mix well.
  • Taste and add a pinch more curry for a hotter dip, if desired

Serve with an assortment of  raw vegetables you have in the refrigerator….or, take a walk through your garden and pick a few sweet peppers and any other vegetables that are ripe for the picking.

If you have the time, take a red sweet pepper and slice it in half lengthwise.  Scoop out the seeds and fill with Curry Dip.  To make it lay flat, even off the bottom with a sharp knife. This makes a beautiful presentation on a dish or platter surrounded with raw vegetables.
